Do you like eating food that makes you sweat profusely and turn red? Do you like crying during your meal? Do you enjoy washing fuck your face spicy dishes down with freshly made IPA’s brewed by some of the most talented brewers in the world? If you answered “fuck yeah!” to any or all of those questions, then you are in luck. Hops and Heat 2016 is here and as a result your life is now complete.
Saturday June 11 at Churchill’s Pub and Grille is the third installment of Hops and Heat one of our three annual craft beer and craft food events. Chef AG Warfield and his staff of lunatics created this event after a day of binge drinking, chicken fighting and chili cooking. One of Chef Warfield’s flunkies made a chili with a shit ton of ghost peppers in it rendering it nearly inedible.
After a few too many pints by all, the young cook challenged Chef Warfield to eat a certain amount of his melt your flesh chili. Money was wagered and beers were poured. Chef Warfield crushed the chili in between sips from a fresh batch of Team Freeman Brewing’s latest IPA. The pain of the chili was excruciating to palate, but the deliciousness of the IPA made it briefly blissful. This bliss was immediately replaced with horrific pain. Chef Warfield won the money but might have lost the fight.
The next morning while still feeling the awful after effects of what he ate Chef Warfield was inspired. He wanted to bring that moment of bliss to you, the general drunken public. More than that bliss though he wished to inflict the blinding pain he felt on paying customers. Hence Hops and Heat was born. It’s the one day a year we can actually guarantee you will regret coming into the pub.
The beers will be some of the most hoppy IPA’s you have ever tasted, including a few the Churchill’s Pub and Grille staff was fortunate enough to help brew: Artifex “Sober in the Morning”, Mother Earth “Sinister Prime Minister” and Pizza Port Carlsbad “They Gon”. We will also be tapping in oldies but still very goodies like Russian River “Blind Pig” and “Pliny the Elder”.
Two of our full time favorites Societe “The Pupil” and Bear Republic “Churchill’s X” will also be on in addition to 35 of the best IPA’s you can get anywhere, ever all being poured alongside each other. From Bend, Oregon to Kalamazoo, Michigan we challenge breweries participating to produce their best IPAs and they gladly deliver. Several of the brewers will be in attendance on Saturday sharing pints and plates of spicy food.
The food is broken down in three categories: Bitten which is damn that’s hot, infected which is why am I doing this to myself? and the Undead which might kill you but if it does you will rise from the dead to roam the earth.
If you have ever eaten at Churchill’s then you know how tight our Chile Popper game is. Saturday a new height will be reached. How about a jalapeno stuffed with a ghost pepper stuffed with a Carolina Reaper, habanero cheese and bacon that’s then battered and deep fried? It’s the start of shark attack season so to help kick that off we will be serving mako shark seasoned with Caribbean Green spice topped with jalapeno slaw and habanero aioli on a ciabatta bun.
Then there’s The Devil’s Short Ribs. Beef short ribs prepared with Carolina Reapers and Ghost peppers with Tabasco mash and root vegetables topped with a chipotle chocolate sauce. The food isn’t just hot it is delicious. That is where we get you. You want to stop eating; you have to stop eating but you can’t because the flavor is just too good.
Hops and Heat 2016 is Saturday June 11 at Churchill’s Pub and Grille. Get ready for the best IPA’s paired with the tastiest, spiciest food you are going to find anywhere. You aren’t dealing with some over glorified line cooks here. We are professionals and take our heat very seriously. I look forward to watching you, the general drunken public burn and then ask for more. “Yes sir, here is that glass of milk you just offered to suck my dick for. That will be ten dollars.”

Southern California craft beer overlord, Stone, usually known for their employees’ humble attitude and the brew pub’s beautiful beer gardens has come under close public scrutiny after a couple of violent incidents took place on their property. Both incidents resulted in injuries, one of which was fatal.
The first incident took place at the brewery’s Stone Cider release. Two hipsters got into a heated argument about whose chest tattoo was better when a break dance fight broke out. Unfortunately for one of these heated hipsters, his skinny jeans were too tight and as he tried to twist his left knee the bone moved but the flesh did not, resulting in a gruesome compact fracture.
The second incident in question took place last Wednesday during Stone’s weekly California Condor Wing Night promotion. As usual the place was packed with ill tempered rich people since the delicious wings of this endangered species are on special every Wednesday for fifty-five and sixty-five dollars a wing.
On this particular California Condor Wing Night one customer was extremely upset that he couldn’t take his wings to go. The floor manager was forced to step in and did so with a blade in his hand. He then stabbed the unruly patron five times in the face in front of a full restaurant. The floor manager, who has since been fired, had to be restrained from stabbing other random customers who he screamed had crossed him on past California Condor wing nights.
Under great public criticism and amidst a press nightmare Stone announced that for the first time ever they were going to hire a head of security whose sole job it would be to maintain the safety of both Stone employees and their customers. The search began and for a moment it seemed like the general drunken public’s outrage and verbal abuse had ceased.
The search ended with the highly controversial announcement that former mafia enforcer and known felon, Jon Domino, was being hired for the head of security position. Public outrage ensued yet again. People questioned why Stone, which boasts to be a family friendly establishment, would bring in a man notorious for being extremely violent to ensure their customer and staff’s safety.
Jon Domino was born in 1976 in Patterson, NJ to Shaun and Shauna Domino. Shaun Domino was a low rent thug who ripped off Kwik-E-Marts and toy stores and Shauna was a common street walker. Jon Domino’s first assault charge was filed against him when he was fourteen by Shaun Domino. Allegedly the son broke the father’s pinkie over a controversial call while playing the family’s favorite sport, dominoes.
Jon Domino dropped out of high school in 1993 to pursue a highly promising career in the mafia. Domino started out as a runner for the Pacino family but quickly advanced up through the ranks. With a heavy drinking problem and a relentless violent streak Domino made his way up to the esteemed position of enforcer for the Pacino family.
Domino was a sort of loose cannon, often breaking people’s legs for little or no reason. Don Don Pacino looked the other way due to Domino’s great performance as an enforcer. Despite several trips to jail a year Domino still dominated the mafia world in stats. For an eight year period between the years 1998-2006 Domino led all enforcers with the most legs broken, most bitches smacked and, by a large margin, most conjugal visits.
In 2008 Domino was forced to leave the Pacino family due to the fact that he had sex with two of Don Don Pacino’s wives and three of his mistresses. When the family turned on him Domino fled out to the West Coast settling in Los Angeles where he worked as a rotating random criminal character on various versions of Law and Order.
Now hired as the head of security at one of the most powerful breweries in the world Jon Domino took questions from the media in the middle of the breweries beautiful garden.
Jon Domino approaches the podium dressed in a black vest that says Officer Domino on the right breast and Stone Head of Security on the left breast. He is visibly armed with several firearms, a crossbow, a machete and several cans of pepper spray.
“What’s your motto for life?” asks reporter one.
“I’ve never met a pair of fucking legs I couldn’t break,” answers Jon Domino.
“What are your thoughts on Stone’s no smoking policy?” asks reporter two.
Domino pulls a camel light from the front pocket of his vest and lights it.
“I love it and I look forward to enforcing that policy with extreme fucking prejudice,” answers Domino.
“What do you think of the beautiful grounds here at Stone?” asks reporter three as he puts his cell phone in Domino’s face to record the response.
“The grounds are beautiful and there are plenty of them. I see a lot of good spots to dispose of my enemies,” answers Domino.
Domino notices the cell phone is recording him.
“You god damn swine are you recording this?” yells Domino.
He rips the cell phone out of reporter three’s hand and smashes it under his foot.
“Hey, Jon Domino says go fuck yourself, this cock sucking press conference is over,” yells Domino as he storms off.
Three weeks into Jon Domino’s tenure as the head of security at Stone and there hasn’t been one incident. What that says to this reporter is while Jon Domino might be offensive and extremely dangerous he gets the job done. Maybe all restaurants/ breweries/bars should follow Stone’s successful lead and add a little Domino to their business plan.

March 2nd 2013 promises to be the greatest day in the history of beer. At 11 am tomorrow Churchill’s Renaissance IV, A New Hope, begins and this year’s installation will prove itself to be the greatest craft beer and food festival San Diego has ever seen. Now, for my money that means Churchill’s Renaissance IV will be the greatest craft beer and food festival in the history of the entire world.
This year’s Renaissance marks the ten year anniversary of publican Ivan Derezin’s hostile takeover of the pub. Under his watch it has transformed from a back alley rug munching swingers bar into the premier craft beer and food pub anywhere. To honor this momentous event Derezin and his staff have devoted themselves to making Churchill’s Renaissance IV the greatest party that you, the general drunken public, has ever had the pleasure of getting shit faced at.
Our draft lineup tomorrow is being hailed as the greatest assortment of craft beer ever offered anywhere. Certifiable Craft Beer Connoisseur Jordan Wilson has done a lot of things he will most likely live to regret to put together such a rare collection of beers. Two of the highlights of this year’s lineup are Bear Republic’s Churchill X IPA and Mother Earth’s Winsten Tenth Anniversary DIPA both of which are being released for the first time anywhere tomorrow.
Last year’s line began at 3:10 am Saturday morning, seven hours and fifty minutes before the pub even opened. As I write this it is 3:24 am Friday morning and this year’s line has already begun. I left the pub forty five minutes ago and saw the first Finest Hour fanatics huddled around fires heating up cold cans of cream of corn as they anxiously awaited Saturday morning to arrive.
These dedicated people will be awarded with not just first choice of the fine beer but also of the amazing craft food we will be offering that day. Mix Master Chef AG Warfield has done the impossible. He has crafted a food menu that rivals our amazing beer menu. When you taste one dish you will want to taste them all. I suggest you bring a belt with seventeen extra notches because once you start eating AGIII’s food you won’t ever want to stop.
Serving this amazing beer and food will be Churchill’s crack staff of craft experts who were voted Best Looking Restaurant Staff for 2012 in this year’s restaurant edition of Penthouse. We are all going to be working extremely hard on Renaissance and will all at one point either be on the verge of freaking out or actually freaking out. So please remember your manners and understand when 850 people show up at a pub all wanting the same thing drinks and food might take a little bit longer than usual to come out.
If you would really like to help us speed up service I highly recommend that you walk through our doors already knowing exactly what it is you want to drink. That means when you approach the bar do so with your first round ready to be ordered. When faced with a bar that is ten deep and a server ticket printer churning out 200 tickets a minute I have no time for you to try to think about what you are ordering. When I ask you what you want if you hesitate for even a half second I will be gone faster than I appeared.
People who are prepared and able to order four beers not by style and not by brewery but by the actual name of the beer will easily get everything they want all day long. Another suggestion is once you have ordered, instead of watching me weave in and out of my equally insanely busy bar mates please pull out your method of payment. Having your cash and credit card ready saves us all precious seconds and allows me to move on to the next customer craving my attention. Trust me your fellow drunk will thank you.
While this all may sound intimidating don’t fear because despite the massive crowd, overworked staff and the possibility of vomit around every corner Churchill’s Renaissance IV will be the most fun you’ve had since you lost your virginity. So get those tents ready because the madness has already begun and if you have any chance of getting a coveted pour off the last keg of 2012 Stone Bro in existence I suggest you get in line an hour ago.

Ever since I was a young boy Thanksgiving has always been my favorite holiday. Hanging out with the people you love the most plus turkey plus football equals the greatest day of the year. Now as a grownup I appreciate it even more as I realize that there are many people and places and things that I am very thankful for. When I was younger I used to think it was stupid when my mother would make everyone at the table take a moment to talk about what they were thankful for, but nowadays I think that is an important part of my favorite holiday so I figured why not share mine with you, the general drunken public.
First and foremost I am thankful for my family, friends and beautiful fiancé. Without these loved ones I would not be the man that I am today. I am thankful to work at Churchill’s Pub and Grille the greatest craft food/beer pub with the best staff in the entire world. While our competitors choose to serve suspect mac and cheese or promote club night with DJ Glowstick or offer drink specials where when you buy a pint you get a $2 shot of 151 and a free match we at Churchill’s do what we have always done, offer great service and freshly prepared food served alongside delicious beer.
I am thankful to Stone Brewery who honored me with the right of being the first person to break the news of their special San Diego Beer Week beer release. Sales on Stone Lite, Stone Hef and Stone Original have been through the roof but the top seller has been Stone Bro of which they have sold so much they are running out of donkey piss to fill the bottles with.
I am thankful to Human Female Hyenas who prowl the night with a hint of flavored vodka and semen on their breath. Without these pack hunting skanks men in bars all across the country would be lost at last call left only with the option of going home alone and whacking off to internet porn. A word of advice to all you lonesome losers getting laid by women older than your mother wrap that shit up B.
I am thankful for hipsters. Without them homeless people would have no one dressed the same as them. I love to watch a group of hipsters sip on poor man’s PBR while wearing two hundred dollar cardigans as they bitch over the infection their cock ring gave them.
I am thankful to reality television for keeping backwoods rednecks, teenage whores and rich white housewives current in our modern society. Without it how else would any of those people make a living that didn’t involve ditch digging, dick sucking or spending other people’s money.
I am thankful to Tim Tebow for being the most talked about backup quarterback/punt protector in the history of football. Without him ESPN would go out of business. I am also very thankful for Robert Griffin III for being the best player in the league, being highly attractive but mainly because he is not Tim Tebow.
I am thankful to bad parents especially when they display their bad parenting in public. While their misbehaving kids are obnoxious and the parents disinterested they act as one of the strongest forms of birth control on the market, and it’s free. I believe high school kids should be trapped in a room with bad parents as a way to deter teen pregnancy which is rampant in this country. Bad parents also make those women who are in long term relationships and can’t wait to have a kid think twice about poking holes in their boyfriend’s condoms.
I am thankful to bad tippers, bros, whistlers and people who believe they know everything about the bar business because they bartended their frat’s homo erotic initiation all male mixer one night. While at times these schmucks make my life a living hell they also put my job into perspective. For every coked up whore who accuses me of not pouring any vodka in her eighteenth vodka red bull there is a regular who is friendly, polite, funny and tips well. Without the customers who make me tell them to go fuck themselves I might fail to appreciate the importance of all the regulars who make this world wonderful.
Lastly I would like to thank the twenty-two year old skank from last night who told me I was going to die of a heart attack because I wouldn’t serve her or her boyfriend who was dressed like Brandon Lee from The Crow. I guess I’m not thankful to her personally but more to the fact that a whore of her caliber will someday die a painful death from one of the many STD’s she has contracted from her years of trolling street corners and that fact brings a thankful smile to my face.

The day has finally arrived. Review evolution is upon us ladies and gentlemen. GULPU.com went live to you, the general drunken public yesterday at 1pm. I would like to thank you all for the patience you have shown in the face of great anticipation for GULPU’s release. There have been some bumps along the road which I can only speak about vaguely as my lawyers have advised me to be less open about my legal affairs.
The latest and perhaps the most laughable was this past week when “someone” hacked into my twitter account. I think we all know who this someone was. It was a bush league attempt at sabotaging my social media outlets in a last ditch attempt to ensure that GULPU.com never went live. After kidnappings, full body cavity searches, unjust arrests and torture, this amateurish stunt did little more than make me change a bunch of passwords which I do every five days anyways.
I would like to thank my web designer, who after having many attempts on his life since being hired at GuerillaDeSwine Productions has requested to remain anonymous, for being a real trooper despite the loss of one or more limbs. It has been a team effort and the reward will be reading all the wonderful reviews that you, the general drunken public have surely been drafting since the first time you found out about the site that puts the power back into the hands of hard working people everywhere.
No longer will we sit idly by while people treat us like servants just because our industry is in pleasing paying customers. Unfortunately, as soon as you empower the consumer the right to dictate every aspect of business service becomes tricky. Now with the internet and a certain four letter site that shall not legally be named people have opened fire on the customer service industry and the hard working people who work within it. GULPU.com is our opportunity to fire back.
It’s simple. You sign up at http://www.gulpu.com/ with an anonymous username and your email and then have a chance to browse one of the many, highly entertaining reviews that people like you have already posted and even comment on the ones you really like. Or you can simply click the Start A New Review button and write your way into review evolution. The release you will feel will be like losing your virginity every time you submit a new review.
It is important to remember that we here at GULPU.com highly encourage that you remain ANONYMOUS. With all the heat we have already felt just for developing GULPU GuerillaDeSwine Productions will not be held responsible if something unsavory or illegal happens to you because you use your real name or say where you work.
We also encourage GULPU.com members to share both good and bad experiences that they have had when working in the customer service industry. There will be a rating system of shot glasses so you will be able to score each individual review. For example if while bartending a beautiful blonde sat at your bar all night drinking whiskey and then tips you with a fifty, a blowjob, and an invitation to a future threesome with her and her twin sister then you should probably award her five shot glasses.
However, if some giant twat who tried to bang his busted girlfriend in the ladies room wants to fight you because you tell him he has a nice purse bro then you would most likely rate this negative experience with just one shot glass. The reviews that have been posted by members so far are so entertaining that I was late to two different legal hearings because I couldn’t stop reading what members of the GULPU.com community had written so far.
GULPU.com isn’t just for restaurant or bar employees; it is for anyone who provides service that is paid for by a customer. Whether you are in retail, work in a call center, are a sales rep or any customer related business GULPU.com is interested in sharing your experiences with others who go through similar encounters with people even if they work in a different industry. In fact my favorite GULPU review so far was written by a local stripper who complained that when giving a lap dance a customer insisted she call him Tim Tebow as she did. That’s what GULPU.com is all about, giving hard working people the right to talk about the honest work they do.
The first twenty reviewers will be GULPU.com VIP members who will receive limited edition shirts this Monday, September 3rd at the GULPU Website Release Party. The party is at 3725 Jefferson St. in Carlsbad, CA. and begins at 3pm. The VIP shirts, designed by Underground Artist of the Year Joe Anderson, will only be available this one time so hurry up and sign up so you can write a review. There will be regular GULPU.com shirts as well as books for sale at the party so bring your wallet and five friends who want to support local literature. Food and live music by DJ SAVEE and the Paragraphs is also on the agenda so don’t be late this Labor Day.
GULPU.com has been a long time in the works and everyone here at GuerillaDeSwine Productions is very proud to be part of such a noble endeavor. Keep those reviews coming and let your soul go free as you unburden your mind from years of working hard to please customers. It’s time to have your voice heard by people who are just like you. It’s time we told websites like the four letter one that legally shall not be named that we will not be treated like animals. It’s time for all of us to experience review evolution at http://www.gulpu.com/

The following is an open apology to you, the general drunken public. I was involved in an incident the other night which unfortunately resulted in the delay of the release of GULPU.com. For that I sincerely apologize. It all started last Wednesday when I was leaving one of my favorite watering holes. While walking through the parking lot I noticed some drunk fucktard wearing a Red Sox hat and a tank top swaying as he pissed on someone else’s car. I was shocked at first but natural instinct quickly took over and I did what any honest American would do when faced with such a situation. I charged the cocksucker.
Upon impact I was able to avoid any urine splashes as I drove this disrespectful scumbag to the ground. He screamed as he fell pissing all over himself on his way down. Before I had a chance to laugh my ass off I found myself surrounded by several very large men dressed in black suits all holding guns pointed at my face.
We stood like that for several minutes when suddenly two cop cars showed up. They began to put me in handcuffs before I could explain what was happening. They didn’t care. Apparently the little prick bastard was some government official’s spoiled son and the big ugly suits were his security detail. They told the cops that I assaulted the fucker and flashed their government ID’s signifying my trip to the big house.
At the station they took all my possessions. When they found my wallet they searched it and found my business card that reads: “Jonathan Avella, CEO, GuerillaDeSwine Productions, We put the ass in class!” Things turned serious when they found out who I was and I was quickly transported to a holding cell at the local CIA building.
They tortured and interrogated me for company secrets for hours and at times I was close to swallowing the suicide pill all GuerillaDeSwine Productions employees are required to carry between their lips. Thankfully I was able to fight off the urge to squeal while still maintaining my silence and sanity.
Just as I was ready to break and sacrifice my life for the good of the company the head of our legal department showed up with an army of lawyers. It wasn’t long before I was free and we were discussing possible out of court financial settlements for my bogus assault charges. When my lawyers made it clear that we planned on suing over my mistreatment those assault charges quickly were dropped.
Unfortunately the government’s lawlessness went unpunished yet again. Not only that, but they got what they wanted all along, which was time. With this time the government attempted to wipe out GULPU before it could be released. Using the address on the back of my business card the government was able to locate the secret headquarters of GuerillaDeSwine Productions. Once there they burnt everything. Every file, every condom and every candy bar or bag of chips in the secret vending machine.
Before you freak out know that what the government thought was GuerillaDeSwine Productions secret headquarters was nothing more than one of the many decoys we have scattered across the world. However, once a decoy is compromised all GuerillaDeSwine Productions projects are shut down for forty eight hours and our employees are escorted into underground bunkers for protection.
My incarceration coupled with GuerillaDeSwine Productions shut down of operations have delayed the release of GULPU.com. Instead of GULPU.com being live tomorrow, it will be fully functional this Tuesday, August the 14th.
What hasn’t been postponed is the GULPU.com release party which is coming up on Monday September, 3rd also known as Labor Day. I couldn’t think of a better way to help America celebrate the social and economic contributions of workers then by us getting stinking drunk and celebrating the workers right to freely critique the very customers who constantly criticize them.
We will be serving up craft BBQ created by Chef AG Warfield, who is prominently featured in the much anticipated soon to release cookbook, San Diego Craft Beer Cook Book. In addition to the food we will be pouring fresh beer from the world’s finest brewery, The Lost Abbey. There will be live music provided by world renowned ninja, DJ SAVEE as well as a special performance by Southern California’s best band the Paragraphs.
Be one of the first twenty people to write a GULPU review when the website launches this coming Tuesday, August 14th and win a GULPU.com VIP invitation to the release party. Winners will receive a commemorative GULPU.com tee-shirt available this one time only, first dibs in the BBQ line, and a special one on one acoustic session with a local heartthrob lead singer.
GULPU is all about the people’s right to write how working in the customer service industry makes them feel. If you like freedom of speech and expression then you have come to the right place. GULPU.com will be here Tuesday August, 14th. Let the review evolution begin!

For starters, as CEO of GuerillaDeSwine Productions I would like to personally thank you, the general drunken public, for an amazing turnout this past Sunday for the LOVE LIFE book release/signing party. We broke the record for most books sold at a pub in San Marcos, CA. ever. Special thanks are in order to Ivan Derezin for letting us host this tribute to local literature at the best craft beer pub in the world, Churchill’s Pub and Grille. Another special thanks are in order to the best band in all of San Diego, the Paragraphs for blessing us with one hell of an acoustic set. Big ups to Jesse Hofbauer, the head of the GuerillaDeSwine Productions music department for making such a special performance, happen.
The best part of the festivities was that it was all in the name of supporting local literature and celebrating National Buy A Book Day. Congratulations to Americans everywhere for returning their eyes to the written page. GuerillaDeSwine Productions has long been a proponent of people buying the wonderful books we sell and we encourage the country to continue to do so at a rapid pace.
The next GuerillaDeSwine Project on the horizon is the release of GULPU.com which we are proud to say is very close to being finished. Despite various attempts at government-sponsored sabotage GULPU.com is very real. So real in fact, I am pleased to publicly announce that it will be released Sunday, August 12th. Ever since we have introduced GULPU.com to you, the general drunken public, the offices at GuerillaDeSwine Productions have been overrun with letters and emails of various people’s reviews of customers or clients who have gone above and beyond to be flaming douchebags. Here is one of my favorites.
Josh M., Las Vegas, NV. GULPU
We originally started doing Tuesday wing night as an attempt to bring people into the restaurant mid week. Sure the wings were a wash at forty-nine cents a piece, but if every person who eats eight wings drinks one to two beers then the profits eventually add up. Most people do, which is why we still offer our mouth watering buffalo wings for so cheap. Unfortunately, our discounted delicious wings also attract people who should be 86ed from every restaurant they’ve ever step foot in.
They come dressed in tank tops, board shorts and flat brimmed baseball caps of teams they have never heard of. As they park mommy and daddy’s SUV in the handicap spot 10 little fucktards who have never bussed a table in their life slither out of the vehicle.
The hostess shudders when she sees them stumble through the door putting each other in headlocks as they do. They demand a table for ten and grow impatient when that’s not something we can accommodate due to the fact that every table in the restaurant is full.
Once their table is finally ready four to six more of them show up and just assume that they can add on extra chairs and tables as they see fit. When reminded that a restaurant isn’t their fucking house they respond with an irrational succession of bro bombs best left to be ignored by an intelligent human being.
Instead of ordering a two dollar soda or a four dollar frosty beer of the week these kids sporting iced out watches, texting on their five hundred dollar phones and wearing designer sunglasses can’t seem to afford anything other than ice water. Not only that but each one of these ten people will require their waters to be refilled every five minutes.
It takes three of us to run their food. When we arrive at the table no one there seems to remember what it is they ordered leaving us standing around holding hot plates while these idiots discuss who got nine buffalo wings and who got eight barbecue wings.
After several minutes of playing wing sauce detective everyone has the food that they claimed they ordered. We ask if they are good and they respond with nods as they’ve already shoved their mouths full with wings as if it were their first meal since mommy and daddy dropped them off at college.
Midway through their meal and two of them claim we gave them the wrong wings. Of course this is after they have eaten half of them already. Inevitably they blame the server for messing up their order. I point out that five minutes ago not only did they not know what they ordered when they were asked if the plate in front of them was right they said yes.
We replace the wings, but honestly caving in to make these little shits happy makes me feel like keying “Hail To The Redskins” into the side of mommy and daddy’s SUV while they are busy rubbing their face in the giant stack of twenty wings which will only cost them ten dollars. Instead we nod and smile and check on them frequently throughout their meal as we do with every table.
Other then needing a refill on water and ranch they always say they are okay. We go through four to five gallons of ranch every Tuesday wing night and a large percentage of this ranch is going to this one table. They use so much ranch that you can no longer see the wing drowned in all that dressing. It’s to the point where we could charge people like this discounted ranch with a side of wings.
When the check comes they scoff at the amount and immediately demand that it be split. Splitting a check for ten people who can barely remember what the fuck they ate just five minutes before can be difficult and is always time consuming.
After finally figuring out who gets charged what there is always one or two of them who claim they are being charged for something they were never served. Again they blame the server even though when asked five to seven times if they were okay they never seemed to mention this mistake they were now so sure we had made.
Then these cheap little bastards have the nerve to leave my servers a penny because they were upset we wouldn’t let them order two hundred wings to go. The ones who can’t spare a penny leave nothing but a stack of gnawed wing bones and a pool of ranch dripping off the edge of their table. When these little schmucks die they will be waiting tables in hell and mommy and daddy won’t be there to ensure their hands steer clear of real work.

The term amateur night is usually used to describe New Year’s Eve. It is the one night a year where everybody who never goes to the bar decides that New Year’s is the night to do so. Any veteran drinker knows to stay away from even their most regular of establishments on such a night to avoid being surrounded by virginal bar goers spewing curdled car bombs all over the bar as they blow furiously on squeaky noise makers.
I’m here to say that it’s not just on New Year’s Eve that you, the general drunken public, should be wary of amateurs. On a nightly and on some nights an hourly basis I witness people doing some really stupid shit that makes you wonder whether or not they are mentally challenged in some way. Unfortunately they usually aren’t. It is much more likely that they are every night amateurs.
Every night amateurs behave in a manner that suggests that they have never been to a bar before in their entire life. This is not true. These people have been to bars before and some of them on a semi-regular basis. Despite this they still don’t realize that there is a certain way you are supposed to act in a public setting where alcohol is being served.
For example don’t bang on the bar, ever. Never reach into my fruit caddy or you will feel the wrath of my iron clad bottle opener, also known as Excalibur, which has bruised the shit out of many a fruit stealing fingers. When you approach a bar always have your id and money ready so that a transaction that should only take thirty seconds doesn’t turn into a five minute ordeal. If you don’t want to be labeled an every night amateur then use common sense and realize that if a bartender overhears you telling the total stranger sitting next you that he is over tipping, you most likely will never get served at that bar again.
The latest every night amateur trend seems to be ordering a drink and then walking away. That way when I return with their drink they are nowhere to be found. Nothing is more frustrating to a bartender who is busy then to have to seek a customer out to serve them. I’m not sure of the logic behind walking away after placing an order. It’s not like it’s going to take me fifteen minutes to fill a glass with some ice and some vodka cranberry. I didn’t give you a number and tell you we would call you over the loudspeaker when your order was up so why in the hell would you ever walk away right after asking me to make you something that takes fifteen seconds?
Every night amateurs come in couples some times. You can spot them because they will be the unattractive pair sloppily making out while sitting at the bar with no regard for anyone who happens to be around them. Drunken public displays of affection are the worst kind. Not only are they sloppy but they are noisy so that every smack of lips, lick of tongues or gnashing of teeth can be heard by anyone within five stools of the nasty couple. Visible tongue twisting and neck slurping can cause many a stomachs to turn. The worst is when this already disgusting display of every night amateur foreplay leads to an under the jacket hand job. When this occurs it must be stopped immediately or else spilled beer and melted water won’t be the only substances staining your bar.
The older an every night amateur is the more difficult they are to deal with. They have been acting like jackasses in public for so long that they actually believe that their behavior is acceptable. This makes every action of an older every night amateur much more extreme. What that means is they will be louder, dumber and more offensive than possibly any person you have ever come across. That also means that when they start making out with whatever other ancient fossil they come across who happens to be just as horny as them that their drunken public display of affection will always end with either an 86ing or a bar sprayed down with elderly semen.
We as bar employees deserve some blame for the high number of older every night amateurs that are out there. If they have been acting in such a moronic way for so long that means somebody somewhere should have said something like, “Hey asshole how about you stop whistling and calling me sweet cheeks or else I’m going to rip your tongue out of your mouth and smack the shit out of you with it.” Any bar owner who doesn’t allow his or her staff to properly police and educate the animal-like behavior that goes on at every bar in the world is doing you, the general drunken public, a disservice. If you don’t call an every night amateur out they will act like a dickbag for the rest of their lives and most likely raise a family of half-wit dickbags that will terrorize innocent bar employees and regulars until the end of time.
The worst offense an every night amateur can perform is the defamation of a check book or credit card receipt. If you don’t want to tip that’s fine, there is a special restaurant in hell you will be waiting tables at when you die, but being cheap is your right. However, vulgarities of any kind found on company property are unacceptable. That means that slipping a condom in a checkbook, drawing a penis or making obscene comments or simply writing fuck you on a credit card receipt will be met with swift action. Disrespectful behavior such as that is an abomination wrapped in an abomination marinated in hot sauce topped with melted Gouda served on a cheese cracker and should result in public humiliation, aggressive 86ing and, possibly, leg breaking.

With modern technology cell phones have come a long way. Devices that used to be dedicated to just phone conversations have evolved into mini computers that allow people to avoid human contact with other people for weeks at a time. These hi-tech phones also allow people to ignore each other in a blatant manner under the guise of being busy on one’s phone. This has especially become rampant in the bar business where it seems bartenders feel like they need to constantly have their cell phone within arm’s reach.
I understand there are special circumstances. People have kids and sick loved ones and gambling problems and in the event of an emergency may need to leave the bar to take a call. However, nowadays people normally want their phone around in case they think of something witty to post on twitter or want to leave a comment on facebook every time they think of a new way to pour a cactus cooler or because they are engrossed in a new app they just downloaded that tells them what kind of panties a girl is wearing as she walks by.
There is nothing more frustrating than walking into a bar with a strong thirst for a pint and upon sitting down seeing a bartender with his back to the bar. Upon further inspection, you see that he is standing in front of the register and briefly you forgive him for breaking this golden rule of bartending. After almost a minute it becomes evident that there is no transaction being processed through the register. You peer down the bar and see that there are five people waiting all with empty glasses. The music is loud but even over it you can hear the bartender give out a chuckle. You move down a few stools for a better view and see that the bartender is too busy on his phone texting to even know that you want a drink. If you ever witness this leave whatever establishment you are at immediately.
The internet in the palm of one’s hand can be very distracting. Some people feel as if armed with this power of information they are able to answer any question or issue thrown their way. Bars have long been a place of great debate. The key to winning most debates are facts and what used to be found in dictionaries, sports almanacs and classic issues of playboy can now be found in modern day cell phones.
Of course there is always the guy who believes his fancy phone can find any piece of information no matter how obscure or asinine the fact faster than anyone else, anywhere. He wears his phone on his hip ready for any software duel. As always there is a regular game for the challenge. They draw their phones and race to find out what 1980’s movie featured the Paul Simon song that just finished playing on the jukebox. I watch from my side of the bar as the bartender leans both elbows on the bar top as he furiously types his way through countless pages of 1980’s movie trivia. Once my glass of whiskey goes without for five minutes or more my patience wears out and I leave, never return to such a place.
A cell phone’s original purpose, once again, was to be a mobile device people could have phone conversations on. Even that most simple function of a cell phone shouldn’t be used when one is working behind the bar. Only two results can come from this, either people are going to be rudely ignored or receive shitty and absent-minded service.
For example take the girl who will continue to serve people while chatting away on the phone. You’ve seen her before. She prances around the bar mis-pouring drinks because she is only half listening to orders while the other half of her half a brain is listening to whoever is on the other side of her cell phone. It’s even worse when after fucking up she apologizes, covers the mouthpiece of the phone and mouths the words “my boss” to you. For some reason she thinks this makes it okay. If this statement is actually true then it makes me wonder why the fuck am I spending money at a bar owned by someone dumb enough to condone such behavior in their business.
The other girl will just stare at you while she talks on her phone. It is apparent whatever conversation she is holding is far more important than getting me drunk, making herself and the bar money or most simply doing her fucking job. Whether she is laughing or feigning sadness to whoever is rambling in her ear, her lack of common sense is never lost on me. Then, when I try to engage her in a last ditch effort to get my drink on, she sticks a bony smoke stained finger with a hot pink painted nail in my face signaling for me to hold on. You are supposed to put phones on hold, not people. As soon as that finger finds its way somewhere near my face I fight the urge to snap it and simply just leave.
To all the bartenders out there who are going to read this and say, “Hey bro, what’s the big deal?” I say you are in a business where making a lot of money is directly related to the happiness of the people you are serving. Talking to your boss because he or she believes they are more important than their customers means the bar they own won’t be in business much longer. Texting your friend that you can’t wait to get off work so you can get drunk is not going to put money in your tip bucket. Twittering every five minutes to keep your four followers informed on exactly what you are doing at all times is only going to leave you with an empty bar. Most importantly, to all be warned that the next time I see a bartender using their cell phone behind the bar I am going to snatch it and stuff it in a very dark place. I encourage you, the general drunken public, to do the same.

I am going to create a shot that consists of Fireball whiskey and ranch dressing. I’m thinking about naming it the Great Balls of Ranch shot but am open to name suggestions. I know this recipe of salad dressing and cinnamon flavored whiskey sounds nasty, but believe me that it is exactly what the general drunken public wants. I know this due to the fact that every time I am waiting tables everyone is always asking for ranch even if their meal doesn’t traditionally call for it. Coincidentally whenever I am behind the bar and the topic of shots are brought up everyone immediately brings up Fireball.
I moved to Southern California several years ago and it didn’t take me long to realize that people out here will put ranch dressing on just about anything. Back east ranch was mostly just reserved for salads, but out here ranch seems to be a more popular condiment than ketchup. It seems like no matter what I serve there is always a constant need for ranch to accompany every dish.
At times I wonder if most people like the taste of ranch more than the food they are eating it with. When you douse something in ranch it is nearly impossible to taste anything other than the dressing itself. That then begs the question if people prefer ranch over the food they are dipping in it why don’t we cut out the middle man? Let’s start serving ranch in a bowl with small sides of food. You can toss the food in the bowl of ranch and then get your dressing fix by the spoonful.
Anyone who works at a restaurant knows how awkward it can be if you forget someone’s side of ranch when you drop off their food. It will be the first thing they look for. When they discover it isn’t there the rest of the table will go quiet. They will try not to make eye contact with the person or with you. The person who was expecting the ranch will address you with a very serious tone of voice as they ask if they could get the ranch they ordered. They then will stare at you with an unwavering look that makes you feel like their life may depend on your answer. It’s as if the very thought that maybe there is no side of ranch because there is no ranch is enough to drive someone to the brink of a serious mental breakdown. Once you return with their side of ranch cooler heads always prevail and then everyone else at the table decides that they would like some ranch as well.
Fireball is a Cinnamon flavored whiskey that was created by our evil neighbors to the North, the Canadians. If that alone doesn’t make it lame then just repeat the words cinnamon flavored whiskey. Whiskey is not meant to be flavored. It is supposed to taste like whiskey. That’s why they call it that. People who drink whiskey do so because they like its natural flavor. If you want to add different flavors to something then grab a bottle of vodka.
I get that you don’t want to drink whiskey. That is a personal choice that has no affect on me. However, the second you start to try to justify to me that Fireball is real whiskey you begin to invade my personal space by insulting my intelligence. Nothing you can say will make it alright to drink Fireball so let’s stop there. If you order a shot of Fireball you might as well be shooting a blonde headed slut or a white gummy bear or a pussy fart or a Washington apple or some other mixed shot meant to taste like anything but alcohol.
This is why I have come up with The Great Balls of Ranch Shot (name subject to change) to please the portion of the general drunken public that would rather bathe themselves in ranch than normal bath water and who believe that whiskey isn’t good enough on it’s own. I am combining the two seemingly most popular items at bars and restaurants and plan on selling them for ten bucks a shot. I will make a killing. No one can resist the mixture of the two things most people prefer to put in theirs mouths. So order another round of Great Balls of Ranch and be on the lookout for, “The Ranchsickle” (patent pending), the next best thing in dessert that will be out just in time for summer.

The Bad Bartender Chronicles III
May 12, 2012With modern technology cell phones have come a long way.
